- 2 cups diced potatoes
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 1 can coconut milk
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- Heat olive oil in a large pot over medium heat.
