Vegan Carrot Potato Soup

Ingredients

  • 2 cups diced potatoes
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Stir in carrots and potatoes, cooking for about 5 minutes.
  4. Add vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Once vegetables are tender, blend the soup until smooth.
  6. Stir in coconut milk, salt, pepper, and thyme, then cook for another 5 minutes.
  7. Serve warm.
