Ultimate Quick and Easy Chicken Enchiladas

Ingredients

  • 3 cups shredded cooked chicken
  • 2 cups enchilada sauce
  • 1 cup shredded cheese
  • 8 flour tortillas
  • 1 can of black beans, rinsed and drained
  • 1 cup corn

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix chicken, black beans, corn, and half the enchilada sauce.
  3. Place a portion of the mixture in each tortilla, roll them up, and place them seam-side down in a baking dish.
  4. Pour the remaining enchilada sauce over the top and sprinkle with cheese.
  5. Bake for 20-25 minutes until the cheese is melted and bubbly.

Notes

  • For extra flavor, add diced onions and peppers to the chicken mixture.
  • Top with fresh cilantro before serving.
