- 1 pound chicken breast
- 1 medium spaghetti squash
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 teaspoon Italian seasoning
- 1/2 cup Parmesan cheese, grated
- Preheat oven to 400°F (200°C).
- Cut the spaghetti squash in half and remove the seeds. Drizzle olive oil and season with salt and pepper.
- Place squash cut-side down on a baking sheet and roast for 30-40 minutes.
- In a skillet, heat olive oil over medium heat and cook chicken until browned and cooked through.
- Add garlic, cherry tomatoes, and spinach to the skillet, and sauté until the tomatoes soften.
- Season with Italian seasoning, then mix in the cooked chicken.
- Once the squash is done, use a fork to scrape out the strands and add to the chicken mixture.
- Mix well, garnish with Parmesan cheese, and serve hot.
Notes
- Can substitute chicken with shrimp or tofu for a different protein.
