Tuscan Chicken and Spaghetti Squash

A delicious and healthy twist on traditional comfort food, featuring tender chicken and roasted spaghetti squash.

Ingredients

  • 1 pound chicken breast
  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the spaghetti squash in half and remove the seeds. Drizzle olive oil and season with salt and pepper.
  3. Place squash cut-side down on a baking sheet and roast for 30-40 minutes.
  4. In a skillet, heat olive oil over medium heat and cook chicken until browned and cooked through.
  5. Add garlic, cherry tomatoes, and spinach to the skillet, and sauté until the tomatoes soften.
  6. Season with Italian seasoning, then mix in the cooked chicken.
  7. Once the squash is done, use a fork to scrape out the strands and add to the chicken mixture.
  8. Mix well, garnish with Parmesan cheese, and serve hot.

Notes

  • Can substitute chicken with shrimp or tofu for a different protein.
  • Great for meal prep; can be stored in the fridge for up to 3 days.
