  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/4 cup chocolate shavings for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  3. Add the eggs, brewed coffee, and vanilla extract, mixing well.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared cupcake liners, filling them about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cupcakes to cool completely.
  9. In a bowl, whip the heavy cream along with powdered sugar until soft peaks form.
  10. Fold in the mascarpone cheese until smooth.
  11. Once cooled, frost the cupcakes with the mascarpone cream and top with chocolate shavings.

Notes

  • For an extra coffee kick, add coffee liqueur to the batter or frosting.
  • Let the cupcakes chill in the fridge for a while for better flavor.
