Thai Peanut Chicken Stir-Fry

  • 1 tablespoon vegetable oil
  • 2 cups mixed bell peppers, sliced
  • 2 cups broccoli florets
  • 1/2 cup peanuts, chopped
  • 1/4 cup soy sauce
  • 1/4 cup peanut butter
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the sliced chicken and cook until browned and cooked through.
  3. Stir in the garlic and ginger, and cook for 1 minute until fragrant.
  4. Add the mixed bell peppers and broccoli, and stir-fry for another 5 minutes.
  5. In a small bowl, whisk together the soy sauce, peanut butter, and honey, then pour over the stir-fry.
  6. Mix well, ensuring everything is coated in the sauce, and add chopped peanuts.
  7. Serve warm over rice or noodles.
