  • 2 cups broccoli florets
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup diced chicken ham
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/2 cup shredded cheese (optional)
  • 1/3 cup olive oil
  • 1/4 cup vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Blanch the broccoli in boiling water for 2-3 minutes, then cool in ice water.
  3. In a large bowl, combine the pasta, broccoli, turkey bacon, chicken ham, cherry tomatoes, red onion, and cheese.
  4. In a separate bowl, whisk together the olive oil, vinegar, Dijon mustard, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
