Stuffed Peppers Soup

Ingredients

  • 4 bell peppers
  • 1 pound ground turkey
  • 3 slices turkey bacon
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, sauté the turkey bacon until crispy. Remove and set aside.
  2. Add chopped onions and garlic to the pot, cooking until translucent.
  3. Stir in ground turkey, cooking until browned.
  4. Add diced tomatoes, vegetable broth, and seasonings. Bring to a boil.
  5. Chop the bell peppers and add them to the pot. Reduce heat and simmer for 20 minutes.
  6. Serve hot, topped with crispy turkey bacon.
