Spiced Carrot Ginger Soup Recipe

Ingredients

  • 2 pounds carrots, peeled and chopped
  • 1 tablespoon fresh ginger, grated
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and sauté until translucent.
  2. Add carrots and ginger, cooking for another 5 minutes.
  3. Add broth, cumin, coriander, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 30 minutes until carrots are tender.
  4. Remove from heat and let cool slightly. Blend until smooth and creamy.
  5. Return to heat, adjust seasoning, and serve hot.
