- 2 pounds carrots, peeled and chopped
- 1 tablespoon fresh ginger, grated
- 1 onion, chopped
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt to taste
- Black pepper to taste
- In a large pot, heat olive oil over medium heat. Add onion and sauté until translucent.
- Add carrots and ginger, cooking for another 5 minutes.
- Add broth, cumin, coriander, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 30 minutes until carrots are tender.
- Remove from heat and let cool slightly. Blend until smooth and creamy.
