Soft & Chewy Dairy-free Chocolate Chip Cookies

  • 1/2 cup coconut oil
  • 1/4 cup almond milk
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine coconut oil and brown sugar until well mixed.
  3. Add almond milk and vanilla extract to the mixture, then mix until smooth.
  4. In another bowl, combine all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in dairy-free chocolate chips.
  7. Drop tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until edges are golden.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
