- 1 pound green beans, trimmed
- 2 cups potatoes, diced
- 4 slices turkey bacon, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 2 cups chicken broth
- Salt and pepper to taste
- In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add onions and garlic to the skillet, sautéing until translucent.
- Add the potatoes, green beans, Cajun seasoning, and chicken broth to the skillet.
- Bring to a boil, then reduce heat and cover. Simmer for about 20 minutes, or until potatoes are tender.
