Smothered Green Beans and Potatoes-Cajun Style

  • 1 pound green beans, trimmed
  • 2 cups potatoes, diced
  • 4 slices turkey bacon, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add onions and garlic to the skillet, sautéing until translucent.
  3. Add the potatoes, green beans, Cajun seasoning, and chicken broth to the skillet.
  4. Bring to a boil, then reduce heat and cover. Simmer for about 20 minutes, or until potatoes are tender.
  5. Stir the cooked turkey bacon back into the skillet, season with salt and pepper, and cook for another 5 minutes.
  6. Serve warm.

Notes

  • For added flavor, consider adding a pinch of red pepper flakes.
