  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 2 cups sliced mushrooms
  • 1 cup chopped broccoli
  • 1 bell pepper sliced
  • 3 cloves garlic minced
  • 1-inch piece fresh ginger grated
  • 2 tablespoons lime juice
  • 1/4 cup fresh cilantro chopped
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add chicken broth, coconut milk, red curry paste, and fish sauce.
  3. Stir in mushrooms, broccoli, bell pepper, garlic, and ginger.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Remove chicken, shred it, and return to the soup.
  6. Stir in lime juice and cilantro. Season with salt and pepper to taste.
