Slow Cooker Lemon Herb Chicken and Rice

A delicious and easy recipe for slow cooker lemon herb chicken and rice that makes for perfect comfort food.

Ingredients

  • 4 pieces chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon, juiced
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. Add the rice, chicken broth, lemon juice, oregano, garlic powder, onion powder, salt, and pepper.
  3. Stir to combine all the ingredients.
  4. Cover and cook on low for 6-7 hours, or until the chicken is cooked and the rice is tender.
  5. Once cooked, shred the chicken and mix it back in with the rice.
  6. Garnish with fresh parsley before serving.
