Slow Cooker Lasagna Soup

A delicious and easy slow cooker lasagna soup that’s perfect for a comforting meal.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 can (6 ounces) tomato paste
  • 2 teaspoons Italian seasoning
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a skillet, brown the ground beef with the onion and garlic.
  2. Transfer the mixture to the slow cooker.
  3. Add the chicken broth, crushed tomatoes, tomato paste, Italian seasoning, and the broken lasagna noodles.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. Before serving, stir in the ricotta, mozzarella, and Parmesan cheese.
  6. Season with salt and pepper as needed.

Notes

  • For extra flavor, consider adding chopped bell peppers or mushrooms.
  • Can also be topped with fresh basil for garnish.
