Slow Cooker Creamy Tortellini Soup

A warm and soothing soup perfect for chilly days, made creamy with tortellini.

  • 2 cups tortellini
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1 cup spinach, chopped
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, combine the olive oil, onion, and garlic. Stir to combine.
  2. Add the vegetable broth and Italian seasoning. Mix well.
  3. Stir in the tortellini and cook on low for 6-8 hours or high for 3-4 hours.
  4. In the last 30 minutes of cooking, add the heavy cream and spinach.
  5. Season with salt and pepper to taste before serving.
