Slow Cooker Cowboy Soup

A warm and hearty slow cooker cowboy soup made with turkey bacon and a medley of vegetables.

  • 8 ounces turkey bacon
  • 1 pound ground turkey
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup diced bell pepper
  • 1 cup diced onion
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 4 cups chicken broth
  • 1 tablespoon Worcestershire sauce

Instructions

  1. In a skillet, cook turkey bacon until crispy, then crumble and set aside.
  2. In the same skillet, brown the ground turkey until cooked through.
  3. In a slow cooker, combine all ingredients including the turkey bacon and ground turkey.
  4. Stir well and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Serve hot, garnished with fresh herbs if desired.

Notes

  • For a spicier variation, add diced jalapeños.
  • Adjust seasonings to taste.
