Slow Cooker Chicken Tortilla Soup

A comforting and flavorful chicken tortilla soup that’s easy to prepare using a slow cooker.

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 ounces)
  • 4 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 jalapeño, chopped (optional)
  • Salt and pepper to taste
  • Tortilla chips for serving
  • 1 cup shredded cheese for garnish
  • 1 avocado, sliced for garnish
  • 1/4 cup fresh cilantro, chopped for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat and sauté the onion and garlic until softened.
  2. Transfer the onion and garlic to the slow cooker.
  3. Add the chicken breasts, diced tomatoes, chicken broth, black beans, corn, chili powder, cumin, paprika, jalapeño, salt, and pepper to the slow cooker.
  4. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  5. Once cooked, remove the chicken, shred it with two forks and return it to the slow cooker.
  6. Serve the soup hot with tortilla chips, cheese, avocado, and cilantro on top.

Notes

  • This soup can also be customized with your favorite toppings.
  • For a spicier soup, add more jalapeños or some hot sauce.
