- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 ounces)
- 4 cups chicken broth
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 jalapeño, chopped (optional)
- Salt and pepper to taste
- Tortilla chips for serving
- 1 cup shredded cheese for garnish
- 1 avocado, sliced for garnish
- 1/4 cup fresh cilantro, chopped for garnish
- Heat olive oil in a skillet over medium heat and sauté the onion and garlic until softened.
- Transfer the onion and garlic to the slow cooker.
- Add the chicken breasts, diced tomatoes, chicken broth, black beans, corn, chili powder, cumin, paprika, jalapeño, salt, and pepper to the slow cooker.
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- Once cooked, remove the chicken, shred it with two forks and return it to the slow cooker.
- Serve the soup hot with tortilla chips, cheese, avocado, and cilantro on top.
Notes
- This soup can also be customized with your favorite toppings.
- For a spicier soup, add more jalapeños or some hot sauce.
