Ingredients

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1 egg
  • 2 teaspoons Italian seasoning
  • 4 cups chicken broth
  • 2 cups diced tomatoes
  • 1 cup diced carrots
  • 1 cup chopped celery
  • 1 cup chopped onions
  • 2 cups spinach
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix ground chicken, breadcrumbs, egg, Italian seasoning, salt, and pepper.
  2. Form the mixture into small meatballs.
  3. Place the meatballs in the slow cooker.
  4. Add broth, tomatoes, carrots, celery, onions, and garlic.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Add spinach in the last 30 minutes of cooking.
  7. Serve warm.
