Slow Cooker Cajun Sausage & Potato Soup

A flavorful and comforting soup made with Cajun spices, sausage, and potatoes.

Ingredients

  • 1 pound Cajun sausage
  • 4 cups diced potatoes
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 tablespoon Cajun seasoning
  • 2 cups corn
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, combine the Cajun sausage, potatoes, onion, garlic, chicken broth, diced tomatoes, and Cajun seasoning.
  2. Cover and cook on low for 6-8 hours or on high for 4 hours.
  3. Stir in the corn and heavy cream, and cook for an additional 30 minutes.
  4. Season with salt and pepper to taste before serving.

Notes

  • Adjust the spice level by adding more or less Cajun seasoning.
  • For a thicker soup, mash some of the potatoes before serving.
