Slow Cooker Cajun Red Beans and Rice

  • 1 teaspoon Cajun seasoning

  • 1 green bell pepper, chopped
  • 3 stalks celery, chopped

  • 6 cups chicken broth
  • 2 cups cooked rice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Rinse the red beans under cold water and soak them overnight.
  2. In a slow cooker, combine the soaked beans, Cajun seasoning, onion, bell pepper, celery, garlic, and chicken broth.
  3. Cook on low for 8 hours or until the beans are tender.
  4. Serve over cooked rice and season with salt and black pepper to taste.
