Sheet Pan Chicken Pitas with Herby Ranch

  • 1 pound chicken breast, sliced
  • 4 whole wheat pitas
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup herby ranch dressing
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss chicken with olive oil, salt, and pepper.
  3. Spread the chicken on a baking sheet and roast for 20-25 minutes.
  4. During the last 5 minutes, add tomatoes to the baking sheet.
  5. Warm pitas in the oven for 2-3 minutes.
  6. Assemble pitas by filling them with chicken, tomatoes, cucumbers and drizzling with herby ranch dressing.
