Roasted Sweet Potato Rounds with Honey & Feta

  • 2 large sweet potatoes
  • 1/4 cup honey
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh thyme

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the sweet potatoes into rounds about 1/2 inch thick.
  3. In a bowl, toss the sweet potato rounds with olive oil, salt, and pepper.
  4. Spread the sweet potato rounds on a baking sheet in a single layer.
  5. Roast for 20-25 minutes, flipping halfway through, until they are tender and golden.
  6. Remove from the oven and drizzle with honey.
  7. Top with crumbled feta and fresh thyme before serving.

Notes

  • For added flavor, sprinkle some red pepper flakes before serving.
