- 1 cup basmati rice
- 2 cups chicken broth
- 4 slices turkey bacon, chopped
- 1 onion, finely diced
- 2 cloves garlic, minced
- 1/2 cup sweet peas, thawed
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
- In a large skillet, heat olive oil over medium heat. Add the turkey bacon and cook until crispy.
- Remove the bacon and set aside, keeping the fat in the skillet.
- Add the onion and garlic, sauté until translucent.
- Add the rice and stir, toasting it for a minute.
- Pour in the chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Remove from heat, add peas and cooked turkey bacon, fluff with a fork, and serve.
