Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and sugar until fluffy.
  3. Add the vanilla extract and mix well.
  4. Gradually add the flour and salt until just combined.
  5. Press a small amount of the dough into muffin tins to form a base.
  6. Add a spoonful of raspberry jam on top of each.
  7. Crumble remaining dough on top.
  8. Bake for 15-20 minutes or until golden brown.
