- 4 sweet potatoes
- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup black beans, cooked
- 1 cup corn, frozen or canned
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 avocado, sliced
- Fresh cilantro for garnish
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and poke holes in them with a fork.
- Place sweet potatoes on a baking sheet and bake for about 45-50 minutes, or until tender.
- Meanwhile, rinse quinoa under cold water and combine with vegetable broth in a saucepan.
- Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is fluffy.
- In a large bowl, combine cooked quinoa, black beans, corn, cumin, chili powder, salt, and pepper.
- Once sweet potatoes are done, slice them in half and scoop out a bit of the flesh.
- Stuff each sweet potato half with the quinoa mixture.
- Top with avocado slices and fresh cilantro before serving.
