Quinoa Stuffed Sweet Potatoes

A delicious and nutritious recipe for quinoa stuffed sweet potatoes that is perfect for a healthy meal.

  • 4 sweet potatoes
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup black beans, cooked
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and poke holes in them with a fork.
  3. Place sweet potatoes on a baking sheet and bake for about 45-50 minutes, or until tender.
  4. Meanwhile, rinse quinoa under cold water and combine with vegetable broth in a saucepan.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is fluffy.
  6. In a large bowl, combine cooked quinoa, black beans, corn, cumin, chili powder, salt, and pepper.
  7. Once sweet potatoes are done, slice them in half and scoop out a bit of the flesh.
  8. Stuff each sweet potato half with the quinoa mixture.
  9. Top with avocado slices and fresh cilantro before serving.
