Pumpkin Streusel Oat Muffins

Delicious and easy-to-make pumpkin streusel oat muffins that are perfect for the autumn season.

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix all the dry ingredients.
  3. In another bowl, whisk together the pumpkin puree, oil, eggs, and vanilla extract.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in chopped walnuts.
  6. Fill muffin cups 2/3 full and bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.

Notes

  • These muffins can be topped with additional streusel before baking for extra crunch.
  • For added sweetness, consider adding chocolate chips.
