  • 2 cups fresh basil leaves
  • 2 cloves garlic
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup olive oil
  • salt to taste
  • 1 pound pasta of choice

Instructions

  1. In a food processor, combine pistachios, basil, garlic, and Parmesan cheese. Blend until finely chopped.
  2. With the processor running, gradually add olive oil and blend until smooth. Season with salt.
  3. Cook pasta according to package instructions. Drain and reserve some pasta water.
  4. In a large bowl, mix the pasta with the pesto sauce, adding reserved pasta water to reach desired consistency.
  5. Serve immediately with extra Parmesan if desired.

Notes

  • For a vegan version, omit the Parmesan cheese or use a plant-based alternative.
