Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add in the egg and mix until well combined.
  4. In a separate bowl, combine the flour, cocoa powder, baking powder, and salt.
  5. Mix the dry ingredients into the butter mixture, alternating with the buttermilk, and add the vanilla and food coloring.
  6. Divide the batter into cupcake liners and bake for 20-25 minutes.
  7. Let cool before frosting with vanilla buttercream.
