Pesto Pasta with Roasted Tomatoes

A delicious and easy-to-make pesto pasta topped with roasted tomatoes.

  • 8 ounces pasta of choice
  • 1 cup homemade or store-bought pesto
  • 2 cups cherry tomatoes
  • 2 tablespoons olive oil
  • Salt to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, toss cherry tomatoes with olive oil and salt. Roast for 20-25 minutes until soft.
  3. Meanwhile, cook pasta according to package instructions. Drain and set aside.
  4. In a large mixing bowl, combine the pasta with pesto and roasted tomatoes. Toss until well coated.
  5. Serve warm, topped with Parmesan cheese if desired.

Notes

  • For extra flavor, add garlic to the olive oil before roasting the tomatoes.
  • Feel free to add vegetables like spinach or zucchini.
