One Skillet Salmon with Lemon Orzo for a Quick Family Dinner

  • 4 fillets salmon
  • 1 cup orzo pasta
  • 1 lemon (zested and juiced)
  • 2 cups vegetable stock
  • 2 cups spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add garlic and sauté until fragrant.
  3. Add salmon fillets, cooking until browned on both sides.
  4. Remove salmon and set aside.
  5. In the same skillet, add vegetable stock, orzo, and lemon juice.
  6. Bring to a boil, then reduce heat and simmer until orzo is cooked.
  7. Stir in spinach and return salmon to the skillet.
  8. Cook until everything is heated through, then serve with lemon zest.
