One Pot Creamy Tomato Pasta

A simple and delicious one pot meal for busy weeknights.

Ingredients

  • 2 cups pasta
  • 1 can (15 ounces) crushed tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, combine pasta, crushed tomatoes, vegetable broth, oregano, garlic powder, and red pepper flakes. Bring to a boil.
  2. Reduce heat to a simmer and cook until pasta is al dente, about 10 minutes.
  3. Stir in heavy cream and Parmesan cheese. Cook for an additional 2-3 minutes until the sauce is thickened.
  4. Season with salt and pepper to taste. Serve hot, garnished with fresh basil.
