Old Fashioned Beef Stew

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 4 medium potatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add beef and brown on all sides.
  2. Add onions and garlic, sauté for 2 minutes.
  3. Pour in the beef broth and add carrots, potatoes, thyme, bay leaf, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, until the beef is tender.
  5. Remove bay leaf and serve hot.

  • For added flavor, you can sear the beef in batches to ensure a good browning.
  • Feel free to add other vegetables like peas or green beans in the last 30 minutes of cooking.
