Mexican Street Corn Pasta Salad

  • 4 slices turkey bacon
  • 1 cup corn kernels, cooked
  • 1 red bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions, then drain and let cool.
  2. In a skillet, cook the turkey bacon until crispy, then chop into pieces.
  3. In a large bowl, combine the cooked pasta, corn, red bell pepper, red onion, and cilantro.
  4. In a separate bowl, mix together mayonnaise, lime juice, chili powder, cumin, salt, and pepper.
  5. Pour the dressing over the pasta salad and mix until well combined.
  6. Add the chopped turkey bacon and stir gently.
  7. Chill in the refrigerator for at least 30 minutes before serving.
