  • 4 medium zucchinis
  • 1 cup cooked quinoa
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon olive oil
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the insides.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
  4. Stir in diced tomatoes, quinoa, oregano, and half of the feta cheese; mix well.
  5. Fill the zucchini halves with the mixture.
  6. Top with remaining feta cheese.
  7. Bake for 25-30 minutes or until zucchinis are tender.
