- 8 ounces rotini pasta
- 1 pound ground beef
- 1 packet taco seasoning
- 1 can diced tomatoes
- 1 can black beans, rinsed and drained
- 1 cup corn
- 2 cups shredded cheddar cheese
- 1/4 cup chopped cilantro
- 1 cup sour cream
- Preheat the oven to 375°F (190°C).
- Cook the pasta according to the package instructions; drain.
- In a skillet, brown the ground beef on medium heat. Drain excess fat.
- Add taco seasoning, diced tomatoes, black beans, and corn. Stir until combined.
- Mix in the cooked pasta and half of the cheese. Transfer to a baking dish.
- Top with remaining cheese and bake for 20 minutes.
