Loaded Taco Pasta Bake

A comforting and easy-to-make dish that brings together the flavors of tacos and pasta.

  • 8 ounces rotini pasta
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 2 cups shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to the package instructions; drain.
  3. In a skillet, brown the ground beef on medium heat. Drain excess fat.
  4. Add taco seasoning, diced tomatoes, black beans, and corn. Stir until combined.
  5. Mix in the cooked pasta and half of the cheese. Transfer to a baking dish.
  6. Top with remaining cheese and bake for 20 minutes.
  7. Garnish with cilantro and serve with sour cream.
