Loaded Quinoa and Sweet Potato Salad

  • 2 cups diced sweet potatoes
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • salt to taste
  • pepper to taste

Instructions

  1. Cook the quinoa according to package instructions and let it cool.
  2. Preheat the oven to 400°F (200°C) and roast the sweet potatoes for about 25 minutes until tender.
  3. In a large bowl, combine quinoa, sweet potatoes, black beans, corn, bell pepper, red onion, and cilantro.
  4. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve immediately or chill in the refrigerator for 30 minutes before serving.
