- 1 tablespoon olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 pound turkey bacon, chopped
- 2 bell peppers, diced
- 4 cups chicken broth
- 1 can (15 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup quinoa, rinsed
- 1 cup shredded cheese (optional)
- In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until translucent.
- Add chopped turkey bacon and cook until crispy.
- Stir in diced bell peppers and cook for about 5 minutes.
- Pour in chicken broth and add diced tomatoes, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat to a simmer.
- Add quinoa and cook until tender, about 15 minutes.
- Serve hot, garnished with shredded cheese if desired.
Notes
- For a spicier version, add crushed red pepper flakes.
- Leftovers can be added to salads or wraps for extra flavor.
