  • 1/2 teaspoon ground cinnamon
  • 1/2 cup raisins or nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, combine the wheat bran and buttermilk. Let it sit for 10 minutes.
  3. In another bowl, whisk together brown sugar, honey, vegetable oil, and eggs.
  4. Add the bran mixture to the wet ingredients and mix well.
  5. In a separate bowl, whisk together whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  6. Gradually add the dry ingredients to the wet mixture until combined.
  7. If desired, fold in raisins or nuts.
  8. Divide the batter evenly among the muffin cups.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.
  10. Let cool before serving.

Notes

  • For a sweeter muffin, you can add more honey or sugar.
