  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup egg noodles (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery; sauté until tender.
  3. Stir in garlic and cook for an additional minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add shredded chicken, thyme, salt, and pepper; reduce heat and simmer for 15 minutes.
  6. If using, add egg noodles and cook until tender.
  7. Garnish with fresh parsley before serving.
