- 3 ripe bananas
- 1 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 1/2 cup chopped macadamia nuts
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/3 cup melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mash the bananas until smooth.
- Add the crushed pineapple, shredded coconut, and chopped macadamia nuts, then mix well.
- In another bowl, mix the sugars and melted butter until combined.
- Add the eggs and vanilla extract to the sugar mixture, stirring until well incorporated.
- Sift together the baking soda, baking powder, salt, and flour, then gradually add to the wet ingredients, mixing until just combined.
- Fold in the banana and pineapple mixture.
- Pour the batter into the prepared loaf pan and bake for 60-65 minutes or until a toothpick comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
