  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/2 cup chopped macadamia nuts
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the bananas until smooth.
  3. Add the crushed pineapple, shredded coconut, and chopped macadamia nuts, then mix well.
  4. In another bowl, mix the sugars and melted butter until combined.
  5. Add the eggs and vanilla extract to the sugar mixture, stirring until well incorporated.
  6. Sift together the baking soda, baking powder, salt, and flour, then gradually add to the wet ingredients, mixing until just combined.
  7. Fold in the banana and pineapple mixture.
  8. Pour the batter into the prepared loaf pan and bake for 60-65 minutes or until a toothpick comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • For added moisture, you can include shredded zucchini or carrot.
