Gochujang Chicken with Broccolini & Crispy Rice

A delicious and easy recipe combining gochujang chicken with broccolini and crispy rice.

Ingredients

  • 1 pound chicken thighs
  • 2 tablespoons gochujang
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 2 cups broccolini
  • 2 cups cooked rice
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil

Instructions

  1. In a bowl, mix gochujang, soy sauce, and honey to create a marinade.
  2. Add chicken thighs to the marinade and let them sit for at least 30 minutes.
  3. Heat vegetable oil in a pan over medium heat, add marinated chicken, and cook until golden brown.
  4. Add broccolini to the pan and stir-fry until tender.
  5. Prepare crispy rice in a separate pan by pressing cooked rice and frying until crispy.
  6. Serve chicken and broccolini over crispy rice, drizzling with sesame oil.

Notes

  • For extra flavor, add garlic and ginger to the marinade.
  • Use leftover chicken for salads or wraps.
