  • 1/2 cup almond flour
  • 1 cup gluten-free all-purpose flour

  • 1 tsp pumpkin spice
  • 1/4 tsp salt
  • 1/4 cup coconut oil, melted

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the pumpkin puree, brown sugar, maple syrup, and melted coconut oil.
  3. In another bowl, whisk together the almond flour, gluten-free all-purpose flour, baking soda, pumpkin spice, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir until combined.
  5. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them apart.
  6. Bake for 12-15 minutes or until the edges are lightly golden.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
