French Onion Beef Short Rib Soup

A warm and comforting soup made with tender beef short ribs and caramelized onions.

  • 2 pounds beef short ribs
  • 4 cups beef broth
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme
  • 1 tablespoon balsamic vinegar
  • 4 slices of baguette
  • 1 cup Gruyere cheese, grated

Instructions

  1. In a large pot, brown the beef short ribs over medium heat.
  2. Add onions and cook until they are caramelized.
  3. Stir in garlic and thyme; cook for an additional minute.
  4. Pour in the beef broth and balsamic vinegar.
  5. Simmer for at least 2 hours until the beef is tender.
  6. Preheat broiler and toast the baguette slices.
  7. Serve soup in bowls, top with baguette slices and sprinkle cheese.
  8. Broil until cheese is melted and bubbly.

Notes

  • Make sure to skim the fat from the soup before serving.
  • For extra flavor, add a splash of red wine.
