- 2 pounds beef short ribs
- 4 cups beef broth
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 1 tablespoon fresh thyme
- 1 tablespoon balsamic vinegar
- 4 slices of baguette
- 1 cup Gruyere cheese, grated
- In a large pot, brown the beef short ribs over medium heat.
- Add onions and cook until they are caramelized.
- Stir in garlic and thyme; cook for an additional minute.
- Pour in the beef broth and balsamic vinegar.
- Simmer for at least 2 hours until the beef is tender.
- Preheat broiler and toast the baguette slices.
- Serve soup in bowls, top with baguette slices and sprinkle cheese.
- Broil until cheese is melted and bubbly.
