Ingredients

  • 2 cups cooked, shredded chicken
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup sliced mushrooms
  • 1 bell pepper, sliced
  • 1 cup snap peas
  • 2 green onions, chopped
  • 1 tablespoon lime juice
  • fresh cilantro for garnish

Instructions

  1. In a large pot, combine chicken broth, coconut milk, red curry paste, fish sauce, and brown sugar over medium heat.
  2. Bring to a simmer and add the sliced mushrooms, bell pepper, and snap peas.
  3. Cook for about 5-7 minutes until vegetables are tender.
  4. Stir in the shredded chicken and heat through.
  5. Remove from heat and add lime juice and green onions.
  6. Serve hot, garnished with fresh cilantro.

Notes

  • For extra heat, add more curry paste or some sliced jalapeños.
