Easy Creamy Spinach Mini Boats That Feel Like a Cozy Hug

A delicious and comforting appetizer featuring creamy spinach stuffed in mini boats.

Ingredients

  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1/2 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 8 mini bell peppers (halved and cleaned)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add spinach and sauté until wilted.
  3. In a bowl, mix together ricotta, cream cheese, Parmesan, garlic powder, salt, and pepper until smooth.
  4. Add the sautéed spinach to the cheese mixture and stir until well combined.
  5. Stuff the mini bell pepper halves with the creamy spinach mixture.
  6. Place the stuffed peppers on a baking sheet and bake for 15-20 minutes until golden and bubbly.
  7. Remove from oven and let cool slightly before serving.

Notes

  • For extra flavor, add chopped herbs like basil or parsley to the filling.
