Easy Creamy Lasagna Soup

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 6 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 8 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the diced onion and minced garlic, cooking until softened.
  3. Stir in the crushed tomatoes, chicken broth, oregano, basil, and season with salt and pepper.
  4. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  5. Add the broken lasagna noodles and cook until al dente.
  6. Stir in the ricotta and heat through.
  7. Serve with mozzarella and Parmesan sprinkled on top.
