Easy Creamy Lasagna Soup

  • 1 pound turkey bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 6 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 pound lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped turkey bacon and cook until crispy.
  3. Add the onion and garlic, cooking until softened.
  4. Stir in the crushed tomatoes, chicken broth, and Italian seasoning.
  5. Bring to a boil, then add the broken lasagna noodles and cook until al dente.
  6. In a separate bowl, combine the ricotta cheese, mozzarella cheese, and half of the Parmesan cheese.
  7. Serve the soup in bowls, topped with a dollop of the cheese mixture and a sprinkle of fresh basil.
