Easy Creamy Lasagna Soup

A delicious soup that combines the flavors of lasagna in a creamy broth, featuring turkey bacon for added flavor.

  • 4 cups chicken broth
  • 1 pound turkey bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 ounces) crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 8 ounces lasagna noodles, broken
  • 2 cups spinach, fresh
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated

Instructions

  1. In a large pot, cook the turkey bacon until crispy.
  2. Add the onion and garlic; sauté until softened.
  3. Pour in the chicken broth and crushed tomatoes; bring to a boil.
  4. Stir in the Italian seasoning and broken lasagna noodles.
  5. Reduce heat and let simmer for about 10 minutes.
  6. Add the spinach, heavy cream, ricotta, and half of the mozzarella; stir until creamy.
  7. Serve hot, garnished with remaining mozzarella and Parmesan.

Notes

  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
