  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 dried guajillo peppers, stemmed and seeded
  • 2 dried ancho peppers, stemmed and seeded
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 1 teaspoon cinnamon
  • 4 cups beef broth
  • 12 corn tortillas
  • 1 cup cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sautéing until softened.
  3. Add the beef chuck and brown on all sides.
  4. Blend guajillo and ancho peppers with beef broth until smooth.
  5. Pour the blended mixture over the beef in the pot.
  6. Add cumin, oregano, and cinnamon, stirring to combine.
  7. Simmer for 2-3 hours until the beef is tender.
  8. Shred the beef with forks.
  9. Warm the corn tortillas and fill them with the beef, topping with cilantro and lime juice.
