Decadent Lentil Tortilla Soup

A warm and comforting soup that combines hearty lentils with the smoky flavor of turkey bacon.

  • 1 cup green or brown lentils
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 can diced tomatoes
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and set aside.
  2. In the same pot, add olive oil, onion, carrots, and celery; sauté until softened.
  3. Add garlic, cumin, and chili powder; cook for another minute.
  4. Add lentils, broth, and diced tomatoes; bring to a boil.
  5. Reduce heat and simmer until lentils are tender.
  6. Stir in lime juice and season with salt and pepper.
  7. Serve topped with crumbled turkey bacon.

Notes

  • For a vegan version, omit the turkey bacon.
  • Add avocado slices for extra creaminess.
