Crockpot Chicken Corn Chowder

A delicious and easy recipe for Crockpot Chicken Corn Chowder that brings comfort food to a new level with the addition of turkey bacon.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups corn kernels
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 slices turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the corn, salt, pepper, garlic powder, turkey bacon, onion, and chicken broth.
  3. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  4. Remove the chicken and shred it with two forks.
  5. Return the shredded chicken to the crockpot, stir in heavy cream and parsley, and cook for an additional 30 minutes.
  6. Serve hot and enjoy your chowder!

Notes

  • For a spicier version, add diced jalapeños.
  • You can use frozen corn if fresh is not available.
